Winery History

Lava Cap Winery, noted for its rich and elegant wines, is located in the beautiful Sierra Foothills near Placerville, California. Founded in 1981, Lava Cap’s first harvest was in 1986. The wine awards and accolades started soon after. Today, Lava Cap is the most decorated winery in the El Dorado Appellation.
Under the direction of winemaker Thomas Jones and his brother, Vineyard Manager Charles Jones, quality and precision are of the greatest importance. Tom implements state of the art technology to craft premium wines from Lava Cap vineyards and selected other vineyards. Charlie directs old world labor-intensive, micro-vineyard management techniques to ensure the finest quality grapes.
Lava Cap Winery implements hand picking of all grapes and each grape cluster is hand sorted. Tom’s winemaking approach includes small lot production, precise, complex blending, and barrel to barrel racking.  These careful and labor-intensive processes ensure that only the finest grapes and best techniques are used in Lava Cap wines. Lava Cap Winery is known for its limited production of red Bordeaux varietals, Petite Sirah and Zinfandel as well as Chardonnay and Sauvignon Blanc wine.

About the Winemaker

Winemaker Thomas Jones is a member of the Jones family which started Lava Cap Winery in 1981. Thomas completed his B.S. in Geology from University of California, Davis and proceeded to work a harvest at a micro-winery near the California Coast. Bitten by the winemaking bug, he went to graduate school and completed a Masters of Science degree in Food Science (Enology and Viticulture) from University of California, Davis while becoming the founding winemaker at Lava Cap. UCD provided a valued scientific framework for his winemaking endeavors. Tom’s winemaking artistic side, that is, the choices made concerning the formation and finishing of a wine, were learned largely by experimentation and observation, a process which is ongoing. “Every vintage is an opportunity to learn more about the nature of wine and how to make the best possible” he says. “I believe a person’s preference for a particular wine style is largely a function of genetics - you can’t please everyone because their palettes vary from birth. My palette responds favorably to rich, harmonious textures and complex, abundant flavors and aromas- these are attributes I seek in the wines I make.” Tom lives with his wife and three children in the Sierra Foothills near Lava Cap Winery.
