For guidance, look to Tuscany, where sangiovese provides the foundation of Chianti Classico. Though sangiovese in Califiornia is a broader, rounder wine, it still has the fruit and build to go with such Tuscan signature foods as bistecca alla Fiorentina and just about any pasta, pizza or risotto that uses tomatoes to proud effect.

Curiosities

Italy's most popular wine grape, accounting for about 10 percent of the country's vineyards, sangiovese has struggled to establish itself in California, though more vintners look to be starting to master the variety.
