When the fruit is left to its own, the wine will be sleek and wiry; when the grapes are fermented or aged in oak barrels, the wine will be denser and heavier.

For lighter styles, delicate seafood or poultry dishes are the best bet; for bigger styles, seafood or poultry with more seasoning or a creamy sauce would work.

Curiosities

Pinot blanc isn't grown much outside of Monterey County, and much of the fruit, wherever it is cultivated, ends up anonymously in sparkling wines.
