Flavor

Fruit flavor often suggests cherries, but herbal tones, pipe tobacco, chocolate, violets, licorice and mint also pop up frequently.

Body

It may look like cabernet sauvignon in the glass, but on the palate it's generally lighter, leaner and gentler.

At the table, pour it with...

Though less tannic and softer than cabernet sauvignon, and firmer and more complex than merlot, cabernet franc can be paired with fairly husky meats, pastas and casseroles.

Curiosities

Generally used to add complexity to more highly regarded cabernet sauvignon, cabernet franc is rising in stature on its own, with new plantings ranging from California to Kosovo.
